Rainbow Cupcakes Spring/St. Patrick’s Day Snacks for Kids

Rainbow cupcakes are perfect for birthdays, Spring, St. Patrick’s Day, or simply adding a pop of color to your day; these delightful treats are fun to make for the entire family.

With a few simple ingredients and a touch of creativity, you can transform ordinary cupcakes into a rainbow that are as fun to make as they are to eat.

Rainbow Cupcake

Ingredients

  • White cake mix- you will also need the ingredients included on the box to make the cake mix
  • gel food coloring

  optional:

  • For frosting, Cool Whip and Jell-O instant pistachio pudding mix

Materials

  • Quart-sized storage bags or piping bags
  • Tall cup
  • Cupcake Pan
  • Cupcake Wrappers

Rainbow Cupcake Instructions

Step 1: Prepare the cake mix according to the box, or use your favorite cupcake recipe. 

Step 2: Place one food storage bag inside the tall cup. You will need one storage bag for each color. Add about 1/2 cup of the mix to the bag.

Step 3: Squeeze the red food gel into the bag.  Secure the bag with the twist tie.  If you are making this with a child, this is a fun part for them.  They can mush together the mixture in the bag so the color is completely blended. 

Repeat this step with all the colors (red, orange, yellow, green, blue, indigo and violet). I didn’t use indigo and violet. I just used one purple color. Missing a color no problem. Use primary colors Blue, Red and Yellow to make all the other colors.

Red and Blue: Purple

Yellow and Blue: Green

Yellow and Red: Orange

Step 4: Once all your colors are mixed, place them in order of the rainbow colors: red, Orange, Yellow, Green, Blue, Indigo, and Violet. Again, I just used purple for indigo and violet. This step makes it easier when you are piping your colors.

Step 5: Place the tips of the bags facing upwards and snip the end off.  Keep the tips facing up so the mixture does not spill out.

Step 6: Pipe the rainbow colors backward. Starting with the purple (indigo and violet), pipe a small amount into each cupcake wrapper.  Repeat with the other colors in this order: purple (indigo and violet), blue, green, yellow, orange, and red.

Step 7: Let the cupcakes bake according to the box.

Optional

Step 8: Pour half of the Cool Whip container into a bowl.  Add the entire packet of Jell-O instant pistachio pudding mix into the bowl.  Mix the Cool Whip and pudding mix together until completely blended.  Ice cupcakes with the mixture when they are completely cool.

You can also add a gold coin on top!

*You can mix and flavor instant pudding with Cool Whip to make a nice light frosting.
