Rainbow Cupcakes Spring/St. Patrick’s Day Snacks for kids

If you’re looking for a fun and cute Spring or St. Patrick’s Day cupcake look no further.  This easy rainbow cupcake recipe is a crowd pleaser.  It’s also fun to make with kids.  Follow the step-by-step directions below to make your very own rainbow cupcake.

Ingredients: White cake mix, gel food coloring, food storage bag with twist ties (or piping bags), tall cup,  optional: for frosting Cool Whip and Jell-O instant pistachio pudding mix

Step 1: Make cake mix according to box.  Mine made 15 cupcakes

Step 2: Place one food storage bag inside the tall cup.  You will need one storage bag per color.  Place about 1/2 cup of the mix into the bag.

 

 

 

 

 

 

Step 3: Squeeze the red food gel into the bag.  Secure the bag with the twist tie.  If you are making this with a child, this is a fun part for them.  They can mush together the mixture in the bag so the color is completely blended.  Repeat this step with all the colors (red, orange, yellow, green, blue, indigo and violet)  Follow the directions on the food gel container to make different colors.  I only make one purple color and it was hard to make the purple colors.

 

 

 

 

 

Step 4:  Once all your colors are mixed place them in order of the colors of the rainbow.  Red, Orange, Yellow, Green, Blue, Indigo and Violet This step makes it easier when you are piping your colors.

 

 

 

 

 

Step 5:  Place the tips of the bags facing upwards and snip the end off.  Keep the tips facing up, so the mixture does not spill out.

Step 6:  Starting with the purple (indigo and violet)  color first pipe a small amount into each cupcake wrapper.  Repeat with the other colors in this order purple (indigo and violet), blue, green, yellow, orange, red

 

 

 

 

 

Step 7:  Let the cupcakes bake according to the box.

Optional:

Step 8: Pour half of the Cool Whip container into a bowl.  Add the entire packet of Jell-O instant pistachio pudding mix into the bowl.  Mix the Cool Whip and pudding mix together until completing blended.  Ice cupcakes with the mixture when they are completely cool.

You can also add a gold coin on top!

*You can mix and flavor instant pudding with Cool Whip to make a nice light frosting.
