Pumpkin Recipes for Kids

It’s pumpkin season.  There are so many great recipes you can make with pumpkin.  Below are some  simple and fun recipes  kids can make with adult supervision.  

*You can substitute the ginger, cinnamon and nutmeg for pumpkin pie spice in any of the recipes below

Pumpkin Cookies 

Ingredients: 2 1/2 cups of flour, 1 1/4 cups of brown sugar, 1 egg, 1 cup of mashed cooked pumpkin, 3/4 cup vegetable oil, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon vanilla

Pre heat oven for 350

Step 1: In a bowl combine flour, salt, baking soda, nutmeg, ginger and cinnamon and set aside

Step 2: In a separate bowl, add pumpkin, brown sugar, vanilla, oil and egg.  Mix well

Step 3: Slowly add flour mixture to the pumpkin mixture and mix well

Step 4: Place spoonfuls of the batter on a greased cookie sheet

Step 5: Bake for 20 minutes or until they turn a light brown color

Step 6: Let cool and enjoy

Maple Pumpkin Cookies 

ingredients: 2 cups flour, 1 cups mashed cooked pumpkin, 1 egg, 1 cup maple syrup, 1/2 cup butter, 1 teaspoon vanilla extract, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon nutmeg, 1/2 teaspoon salt, 1 teaspoon cinnamon, optional 1 cup pecans

pre heat the oven 350

 

Step 1:  Cream the butter (mix well) in a large bowl

Step 2: Add pumpkin, maple syrup, egg and vanilla to the butter and mix until smooth

Step 3: In another bowl add the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Mix well

Step 4: Add the flour mixture to the pumpkin mixture a little at a time mixing well. If adding nuts add them after all of the flour mixture has been added to the pumpkin mixutre.

Step 5: On a greased cookie s sheet drop spoonfuls of the dough, leave space in between each cookie as they will spread

Step 6: Bake for 15-20 minutes or until they are light brown

Step 7: Let cool and enjoy!

 

Pumpkin Waffles or Pancakes 

Ingredients: 2 cups of flour, 3 eggs, 3/4 cup mashed pumpkin, 1/2 cup vegetable oil, 1 3/4 cup milk, 2 teaspoons baking powder, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon nutmeg, 1/2 teaspoon salt

Step 1: Beat eggs in a large bowl, add the milk pumpkin and vegetable oil, mix well

Step 2: In a separate bowl add the flour, baking powder, cinnamon, ginger, salt and nutmeg, mix well

Step 3: Add the pumpkin mixture to the flour mixture and mix well

Step 4: The batter is now ready.  You can make waffles or pancakes or go crazy and make both!

 

Simple Pumpkin Pie

Pre heat oven 375

Ingredients: Frozen Pie Crust, 2 1/2 cups of cooked, mashed pumpkin, 4 eggs, two 15 ounce cans of condensed milk, 1 cup brown sugar, 1/2 teaspoon salt, 1 teaspoon ginger, 1 teaspoon nutmeg, 1 teaspoon cinnamon, 1/4 teaspoon ground cloves

Step 1: Add all the ingredients in a large bowl and mix until all ingredients combined and smooth

Step 2: Pour the mixture into your frozen pie crust

Step 3: Bake for 50-55 minutes. To make sure pie is fully cooked when you pull it out poke the middle with a tooth pick or butter knife.  If it comes out clean it’s done, if not cook for a little longer.

Step 4: Let cool and serve, If you like add some whip cream
