I have made these muffins with children many times and it’s always a hit. There are a lot of jobs you can give kids when making this recipe which makes them feel good. What kid doesn’t like mashing up food!
Ingredients: 1 egg, 1/3 cup light brown sugar, 2 ripe bananas, 1/4 cup vegetable oil, 1 teaspoon vanilla extract or use banana extract, 2/3 cup flour, 1/2 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon cinnamon
Preheat oven to 350 degrees
Step 1: Mix dry ingredients (flour,baking soda and baking powder) in a bowl and set aside
Step 2: In a large bowl mix the egg and brown sugar together, add in vanilla or banana extract
Step 3: In a small bowl break up 1 1/2 bananas into small pieces and mash with a fork. Add to the egg and sugar mixture and mix well
Step 4: Add the flour mixture and stir until all ingredients are combined
Step 5: Spoon mixture into the muffins liners
Step 6: Slice the remaining half of the banana thinly and add to the top of each muffin
Step 7: Bake for 12-15 minutes until firm and enjoy! Makes 10 muffins
