Fall is the time of year where we start to see pumpkin everything. These pumpkin recipes below are sure to please. So take the kids into the kitchen and start creating with these simple recipes below:
*You can substitute the ginger, cinnamon and nutmeg for pumpkin pie spice in any of the recipes below
Pumpkin Cookies
Ingredients: 2 1/2 cups of flour, 1 1/4 cups of brown sugar, 1 egg, 1 cup of mashed cooked pumpkin, 3/4 cup vegetable oil, 1/2 teaspoon salt, 1/2 teaspoon baking soda, 1/2 teaspoon ground nutmeg, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/2 teaspoon vanilla
Pre heat oven for 350
Step 1: In a bowl combine flour, salt, baking soda, nutmeg, ginger and cinnamon and set aside
Step 2: In a separate bowl, add pumpkin, brown sugar, vanilla, oil and egg. Mix well
Step 3: Slowly add flour mixture to the pumpkin mixture and mix well
Step 4: Place spoonfuls of the batter on a greased cookie sheet
Step 5: Bake for 20 minutes or until they turn a light brown color
Step 6: Let cool and enjoy
Maple Pumpkin Cookies
Ingredients: 2 cups flour, 1 cups mashed cooked pumpkin, 1 egg, 1 cup maple syrup, 1/2 cup butter, 1 teaspoon vanilla extract, 1 teaspoon baking soda, 1 teaspoon baking powder, 1/2 teaspoon nutmeg, 1/2 teaspoon salt, 1 teaspoon cinnamon, optional 1 cup pecans
pre heat the oven 350
Step 1: Cream the butter (mix well) in a large bowl
Step 2: Add pumpkin, maple syrup, egg and vanilla to the butter and mix until smooth
Step 3: In another bowl add the flour, baking soda, baking powder, cinnamon, nutmeg and salt. Mix well
Step 4: Add the flour mixture to the pumpkin mixture a little at a time mixing well. If adding nuts add them after all of the flour mixture has been added to the pumpkin mixture.
Step 5: On a greased cookie s sheet drop spoonfuls of the dough, leave space in between each cookie as they will spread
Step 6: Bake for 15-20 minutes or until they are light brown
Step 7: Let cool and enjoy!
Chocolate Chip Pumpkin Cake
Ingredients: 1 box of spice cake mix, 1 can of pumpkin, 2 eggs, 1/3 cup water, 1 1/2 cups of semi-sweet chocolate chips
Preheat oven to 350
Step 1: Pour cake mix into mixing bowl
Step 2: Add eggs, pumpkin and water into the mixing bowl. Mix until all the ingredients are blended together.
Step 3: Pour in the chocolate chips.
Step 4: Pour batter into greased cake pan. Bake for 35 minutes. Stick a toothpick in the center of the cake if it comes out clean it’s finished. Let cool and enjoy.

Pumpkin Cupcakes
Ingredients: 1 box of spice mix cake, 1 can of pumpkin, 3 eggs, 1/3 cup vegetable oil, 1/3 cup water, vanilla or cream cheese frosting and sprinkles
Preheat oven to 350
Step 1: Pour cake mix into mixing bowl
Step 2: Add eggs, pumpkin, oil and water. Mix until all the ingredients are blended together.
Step 3: Pour mixture into cupcake cups.
Step 4: Bake for 20 minutes. Let cool completely.
Step 5: Add frosting and sprinkles and enjoy
Pumpkin Waffles or Pancakes
Ingredients: 2 cups of flour, 3 eggs, 3/4 cup mashed pumpkin, 1/2 cup vegetable oil, 1 3/4 cup milk, 2 teaspoons baking powder, 1/2 teaspoon cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon nutmeg, 1/2 teaspoon salt
Step 1: Beat eggs in a large bowl, add the milk pumpkin and vegetable oil, mix well
Step 2: In a separate bowl add the flour, baking powder, cinnamon, ginger, salt and nutmeg, mix well
Step 3: Add the pumpkin mixture to the flour mixture and mix well
Step 4: The batter is now ready. You can make waffles or pancakes or go crazy and make both!
