Multi-Colored Meringues

These home made colorful meringue cookies are fun to make and taste good too!

ingredients: 3 egg whites, 3/4 cup sugar, 1/2 teaspoon cornstarch, 1/2 teaspoon lemon juice, food coloring

Preheat oven to 250 degrees

Step 1: In a bowl beat egg whites until peaks form

Step 2: Add 1 tablespoon of sugar to the egg whites at a time and continue to whisk to form stiff peaks repeat until all the sugar has been used

Step 3: Add in cornstarch and lemon juice and whisk.  The meringue should look smooth and glossy

Step 4: Separate meringue into different bowls and add food coloring (1 drop at a time) to each. Using a spatula fold color in.

Step 5: Fill *piping bag with 1 of the colored meringue mixtures. Over a cookie sheet covered in parchment paper squeeze bag in swirling motion to form cookies.

Step 6: Bake meringues for 35 minutes or until firm.  Leave them in with the oven off for about 1 hour until completely cool. Then serve, enjoy!

* No piping bag, no problem.  Take a plastic zip lock bag and make a small cut in one of the bottom corners voila home made piping bag!

Easy to fill bag- Place piping bag in a tall cup. Fold the top of the bag over the cup, fill bag while in the cup.
